Quick and Dirty Veggie Tacos

Like many great recipes this one comes from a friend after a church cookout. These recipes are almost better than a church cookbook because you actually get to taste the food…and someone else cooks it.

The beauty of this recipe also comes from its simplicity. Rather than try to come up with specific amounts for some of the ingredients I suggest you add and subtract based on your tastes.


Brown rice

1/8 to 1/4 cup Taco Seasoning (homemade or from bulk section at co-op)

Salt to taste

Black beans (rinsed and drained)



Cubed avocado

Maybe some tomatoes

Cilantro (rip off a small amount, finely chop, add more to taste)

Sour cream



Cook brown rice as you normally would but add 1/8 to 1/4 cup of taco seasoning at the end and then salt to taste.

Top with black beans, corn, salsa, (add sour cream and cheese if you like), cubed avocado would be good, fresh cilantro if you’ve got it.

Stuff it in a tortilla, hard taco shell or grab a bowl and spoon.
