Hash-Brown Eggs

As I am a fan of breakfast for any meal this one promises to become a national treasure. I also like how it serves 1-2 people and appears to be something somewhat elaborate looking that can be thrown together in a flash. Plus you can add or subtract the proportions to meet the number of people you have to serve. All you need is a cast iron skillet.  I would think you’d want to take the skillet and throw it into the oven. But the picture suggests using some type of baking dish/serving dish.

Ingredients and Directions:

Fry 1 cup each chopped onion and grated potato in a cast-iron skillet with butter until crisp.  Add 1/2 cup grated cheddar and crack in 2 eggs. Bake at 425 degrees F until set; top with salsa and/or chopped green onions
