Ice Cream Cone Cupcakes

This recipe works great…especially when you use the ice cream cone styled cupcake pan the kids got me for Father’s Day. Courtesy of


6 tbsp butter, softened
1 cup flour
1/4 tsp salt
1/2 cup milk
3/4 cup sugar
1 tsp baking powder
2 eggs
1 tsp vanilla

Heat oven to 350 degrees. Grease and flour pan and set aside. In medium bowl together butter and sugar until light and fluffy. Add remaining ingredients, scraping the bowl often. Beat on medium speed for 2 minutes. Spoon batter into pan. Bake for 17 to 24 minutes until inserted toothpick comes out clean. Remove from oven and cool in pan for 10 minutes. Remove from pan and wait to cool completely. Serve with a scoop of ice cream on top or pipe frosting to resemble soft serve ice cream. Fill cups no more than 3/4 full.
