Sausage and Chive Biscuits

I love the idea behind these biscuits…everything you need in one nice neat little package. Plus you can bake a pile of them and eat them as the mood strikes.  I’d say about the only other thing you’d need to do is crack one in half and lay an and egg or two over-easy on top. Then again maybe some cheese sauce…or even gravy?

1 1/2 cups all-purpose flour

1 1/2 cups white whole wheat flour

1 Tbsp baking powder

1/2 tsp baking soda

1 tsp sugar

1/4 tsp salt

1/2 cup (1 stick) unsalted butter, cold and cubed

1 cup buttermilk

1 cup cooked mild chicken sausage, crumbled

1 cup cheddar cheese, shredded

1 Tbsp fresh chives, chopped


Preheat oven to 425 degrees.

In a medium-sized mixing bowl whisk together flours, baking powder, baking soda, sugar, and salt. Add the butter cubes and work in with a pastry blender or two forks until crumbly.

Add sausage, chives, and cheese and mix to incorporate. Add buttermilk and mix everything until well combined.

Transfer dough to a lightly floured surface and pat into a 8×10 rectangle and 3/4″ thick. Cut dough into 2″ squares. Place squares on a parchment lined cookie sheet 1″ apart. Bake for 12 to 15 minutes or until slightly golden.

Best served warm with butter. Enjoy!
