Broccoli Slaw

I made this the other night when we had a pile of ribs smoked for a friend’s birthday party. Everyone liked it even though I accidentally left the sugar out.  So you may want to mix the dressing and then season with sugar to taste.  The broccoli slaw comes from the stalks. The bag looked like someone sliced it into small spaghetti-like pieces and then cut those up.  Also-don’t forget to save the Ramen seasoning. I threw it away and had to dig it out of the garbage.      

Ingredients

* 2 16 oz. packaged broccoli slaw

* 1 3 oz. package Ramen noodles (oriental flavor or any flavor you have on hand)

* 1/2 cup green onions (both white and green parts)

* 1 cup unsalted peanuts

For the dressing:

* 1/4 cup granulated white sugar

* 1/4 cup canola oil

* 1/3 cup cider vinegar

* seasoning packet from Ramen noodles

Make the slaw first: Using a rolling pin, crush the Ramen noodles. This can be done while the noodles are still in the package, or you can remove the noodles and place them in a sealed zip-loc bag and then crush them.

Toss together the broccoli slaw, crushed Ramen noodles and green onions in a large salad bowl. Set aside.

To make the dressing: Whisk together the sugar, oil, vinegar and Ramen seasoning packet in a small bowl. Pour the dressing over the slaw and toss well to coat evenly. Sprinkle the peanuts on top. Serve immediately.

Makes 12 servings.
