This looks like one of those recipes that is not only healthy but filling. And it seems like the kind of recipe you can make by scrounging through the ingredients you haveleft in the fridge. Kind of like wearing your dress clothes when you run out of jeans and t-shirts.
2 tablespoons pesto sauce
2 flatbreads or pitas, each about 7 inches across
1 tomato, thinly sliced
1 tablespoon chopped fresh basil leaves
1/4 cup shredded mozzarella cheese
1. Heat oven to 425°F.
2. Spread pesto on bread. Add a layer of tomato and a layer of basil. Sprinkle cheese over top. Bake for 7 minutes, or until cheese is golden and melted.
