I got this one off of an Australian food website. So they’re kind of English, but not really. So if they call them chips are they really talking potato chips or do they mean like french fries? Or Pomme Frites? The site called them chips. Either way the recipe is simple. Sprinkle a little sea salt, kosher salt or flavoring of your own. I also like the recipe because it details how to really cook fries. Real fries are fried twice not once. Take that Mickey-D’s!
2 pounds of potatoes. Peeled and cut into large chips
Sea Salt, Kosher salt or favorite seasoning
1. Simmer chips in water for 15 minutes. Medium heat.
2. Par cook them in oil at about 250 degrees for 5 minutes. Drain.
3. Before serving return chips to oil at 355 degrees until golden and crisp. Drain.
4. Toss gently with salt, Lowry’s, Ranch dressing mix…your options are endless. Start light on seasoning and work your way up. You can always add more but you can’t take it away.
