From my friend Matt. I always loved eating leftover pizza in college…typically off the box on the floor I woke up next to. But I’ll tell you more about that story when you’re older.
1 tablespoon Oil, vegetable
1 Onion, chopped small
1/2 cup Mushrooms, sliced
1/4 cup Green peppers, slivered
1 cup Tomatoes, undrained
1 cup Stock, beef
1 cup Pepperoni, thin sliced
1/2 teaspoon Basil, dried
1 cup Cheese, mozzarella shredded
Preheat oven broiler. Heat oil over medium heat, stirfry onion, mushroom and green pepper till soft, not browned. Add tomatoes, stock, pepperoni and basil, cook till heated through. Ladle soup into ovenproof bowls and sprinkle with cheese. Broil till cheese melts and is bubbly.
(A few croutons on top help make up for the lack of crust, and Hy-Vee sells a turkey pepperoni that’s _much_ less greasy but very tasty – Hormel brand, I think…not that there’s anything wrong with grease…)
